Chocolate does not begin in a confectioner’s mould. At our bakery, that journey from raw bean to elegant bonbon is one of artistry, science, and reverence for detail.

We begin with premium cocoa beans grown on small, sustainable farms where harvesting remains an act of care rather than convenience. Once the beans arrive, they are roasted with precision until their aroma fills the air with warmth and quiet depth. This is where the character of the chocolate is formed: too brief a roast and the flavour is muted; too long and it loses its grace.

After roasting, the beans are winnowed and ground into a smooth paste, then slowly refined through conching until the bitterness softens and the fragrance blossoms. Tempering follows, a process that gives the chocolate its elegant gloss and crisp bite. It is this stage that separates ordinary chocolate from the truly exceptional, for it demands both patience and accuracy.

Once tempered, the chocolate is ready for creation. In our kitchen, it becomes the foundation of our bonbons, which we fill with hand-whipped ganache infused with coffee, raspberry, sea salt, or praline. Each piece is cast, filled, sealed, and polished by hand.
